🥕 Hearty Mulligan Stew 🥔

Mulligan Stew is the ultimate comfort food, loaded with tender beef, hearty potatoes, carrots, and other vegetables in a savory, rich broth. Perfect for chilly days, this one-pot meal is easy to make and brings everyone back for seconds!

Ingredients:

1.5 lbs beef stew meat, cubed
Salt and pepper to taste
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
4 carrots, sliced
3 potatoes, diced
3 celery stalks, sliced
1 can (15 oz) diced tomatoes
4 cups beef broth
1 cup frozen peas
1 tsp dried thyme
1 bay leaf
Fresh parsley for garnish (optional)
Instructions:

Brown the Beef: Season stew meat with salt and pepper. In a large pot, heat olive oil over medium-high heat. Add beef and cook until browned on all sides. Remove and set aside.

Sauté Vegetables: In the same pot, add onion and garlic. Sauté until onions are soft and fragrant.

Build the Stew: Add carrots, potatoes, celery, browned beef, diced tomatoes, beef broth, thyme, and bay leaf. Stir to combine.

Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours, or until the beef and vegetables are tender.

Add Peas: Stir in frozen peas and cook for an additional 5-10 minutes.

Serve: Garnish with fresh parsley if desired and serve hot.

Honey Garlic Butter Shrimp & Broccoli 🍤🥦

Sweet, savory, and packed with flavor, this Honey Garlic Butter Shrimp & Broccoli is a quick and tasty meal that’s perfect for busy weeknights!

Ingredients:

1 lb shrimp, peeled and deveined
2 cups broccoli florets
3 tbsp butter, divided
3 tbsp honey
3 cloves garlic, minced
2 tbsp soy sauce
Salt and black pepper, to taste
Optional: red pepper flakes for a little kick
Instructions:

Cook Broccoli: In a large skillet over medium heat, melt 1 tablespoon of butter. Add broccoli and cook until tender-crisp, about 3-4 minutes. Remove and set aside.
Sauté Shrimp: In the same skillet, melt another tablespoon of butter. Add shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink and cooked through. Set shrimp aside.
Make the Sauce: Lower heat and add remaining butter, honey, garlic, and soy sauce. Stir for 1-2 minutes until the sauce thickens slightly.

Ingredients
For the Crust

1 1/2 cups almond flour
1/4 cup melted butter
1 tbsp powdered erythritol sweetener

For the Filling

1 cup pecan halves
1/2 cup butter
1 cup powdered erythritol sweetener
3 large eggs
1 tbsp vanilla extract
1/4 tsp salt
Instructions
Preheat your oven to 350°F (175°C).
For the crust, mix almond flour, melted butter, erythritol, and salt until well combined. Press the mixture into the bottom of a pie dish. Bake for 10 minutes, then let it cool.
For the filling, melt the butter in a saucepan. Add the erythritol and whisk until smooth. Remove from heat and let cool slightly.
In a separate bowl, whisk eggs, vanilla extract, and salt. Slowly add the cooled butter mixture, whisking continuously. Stir in the pecan halves.

Raspberry Coconut Magic Bars

Ingredients:
1 2/3 cups graham cracker crumbs 🍪
1/2 cup (1 stick) melted butter 🧈
2 tbsp sugar 🍭
3 cups sweetened, flaked coconut 🥥
14 oz (1 can) sweetened condensed milk 🥛
1 cup seedless raspberry preserves 🌿
1/2 cup chopped pecans 🌰
1/2 cup semisweet chocolate chips 🍫
1/3 cup white baking chips 🍫
1 tsp shortening 🛢️
Directions:
1️⃣ Preheat oven to 350°F (177°C).
2️⃣ Mix graham cracker crumbs, melted butter, and sugar. Press into a greased 9x13 inch baking dish.
3️⃣ Sprinkle coconut over the crust, then drizzle with sweetened condensed milk.
4️⃣ Bake for 20-25 minutes until coconut is lightly browned. Cool completely.
5️⃣ Spread raspberry preserves over the crust, then sprinkle with chopped pecans.
6️⃣ Melt semisweet chocolate chips; drizzle over pecan layer.
7️⃣ Melt white baking chips with shortening; drizzle over bars.
8️⃣ Let bars set until chocolate firms up. Cut into bars and enjoy!
